Egg mayonnaise left out of the fridge for 3 days in summer months can lead to very serious food poisoning! BB has a duty of care to HMs.

Charlie is right to complain!
Mayo SHOULD be refrigerated once it's opened and so should tomato ketchup - if left out they can get too warm and cause stomach/digestive problems.
Brown sauce can be left in a cool dry place as it has a high vinegar content.
