I saw this thing in the paper the other day and an option for a gap year was to go there and work with sea turtles, rehabilitating them because they're injured

Work at an animal shelter (dog rescue preferably) OR a reptile sanctuary, something along those lines.
Actually - working in an American Summer camp also, that's an awesome way to spend your Summer.
