I think Luke A thought that maybe Sara had moved closer to the outsiders.

But in the secret room Sara was sitting beside Caroline (it was clear that they had made up), and Sara spoke up to defend Shievonne.

However his anger seemed a bit sinister, also I didn't like the way he called her babe when he was talking to her.

I agree, it seemed that Sara had mistakenly thought that he was trying to accuse her of picking Adam and kept going on about. I think he snapped out of frustration as she was trying to make an argument out of nothing. He obviously wasn't angry at her, as he later defended her to Adam. I think they just got their wires crossed and I don't think he was unreasonable.

He did defend him. He said that Adam didn't have a bad side to him and pressured Caroline into give a reason as to why she thought he had, which she couldn't. He also disagreed with Shivonne when she tried to persuade Luke that Adam was a bad guy. If he was a coward he would have agreed with them or kept quiet, he wouldn't have challenged them.
