Best condiment with chips?

There are a lot of different sauces for a lot of different things, but it's a universal truth (as decided by me) that all sauces work with french fries. What's your favourite? I think mine might be garlic mayonnaise, but you can't beat good old ketchup... or salad cream perhaps
