Maybe they're lactose intolerant and really WANT the cheese, but they can't?


We do ours Alton Brown style:
toast the bun, spread mayo on the bottom bun and cover it (and I mean cover) with fresh grated black peppercorns. Burger seasoned only with salt and pepper, cheese melted on top, ketchup and grilled onion on top of that, top bun. The juices from the burger mix with the mayo and pepper, and the mayo keeps the bottom bun from getting soaked through.

And the most important part of all - NEVER EVER EVER squish the burgers while they're cooking.
