Oh babes I'll have like 1 main meal that has like 800-1000 calories and then like a really small meal and couple of little snacks. xx
I'm dedicated! Motivated! determined! It's time for me to shift the pounds.

My tiresome tip for you:
I think 1500 is too low - you'll find it hard to keep that in the long run (and the wight will eventually come back with a "bonus").
Don't starve yourself, but learn the right amount for you and know where it's just unnecessary.
Eat balanced, with a lot of fresh veggies and fruits - gain your calories from the right things rather than sticking to a plain goal number with poor quality food.

I don't really eat that much on Christmas, like we're having beef wellington and then it's dessert and a small meal in the evening.

You can still start now even if Christmas is just around the corner. Just have Christmas Day off as a cheat day where you can eat whatever and then go back to eating healthy/working out afterwards. Christmas is in 3 weeks so there's still quite a bit of time.
Or start now as a sort of trial run and give yourself a week to see if you can stick to it and if you can't, come up with a more realistic goal and then start again in the New Year when you're ready.
