I didn't think too much about when I watched the episode but I've been reading alot of theories saying that, that was the horse from the start of the episode, that they went to lengths to show us had died :think:
Is Arya dead also?

I legit think the writers just thought “let’s plonk a horse in there for her to have an easy escape on”

Like she's literally the only one standing in amongst all that Pompei esque carnage and not only did they show that soldier on the horse earlier but they spent a little too long on the horse dying on the ground. Also :
