Pigeon is generally for Christmas in Southern France as it's quite hard to cook.
Horse is also very popular in France, you can buy it whenever you want, but it's quite expensive.
Frogs legs are quite small so we do eat them like fries.

About the brain, think that you can be more intelligent afterwards...well that's how my mum made me eat that when I was younger lol
