Is there a way to change the preview image of a folder?

I don't really know how to describe it so I print screened:

The little image on the iTunes Music Folder has been pissing me off so much! I have no idea what it is. I don't even have an album artwork that looks like that! How do I change it?

its normally the last image that went in i think
