Basically a couple of eggs and a chicken breast / bit of fish is plenty and under 500 even if you eat the yolks. Veggie is harder, especially if you don't have dairy, because the best non-meat protein sources are also high calorie (cheese, nuts, etc). |
Don't want to rely too heavily on eggs and meat, might have to be fish, nuts and veg.

5 oz of cooked salmon has 36grms of protein and 240 cals, if you like fish you should have no issue getting your protein in, in a low cal diet
