And with Cher, I think it's like her little stage act thing, if you see her video diaries you see she's not quite as confident as she comes across on stage. Also you can tell that when she's been in the bottom two, she gets upset and ends up crying, she's not all she's made out to be, people have misjudged her based on what's been said about her.

Oh I think the tears and upset come more from the spoiled little girl syndrome, tantrum like in not getting her own way - and / or the fact that tears and upset are quite natural reactions from anyone who feels let down by their fans, who may be the next one to be booted off the show. So that simply doesn't wash with me.
She's cocky as hell off stage too. She's had hissy fits about outfits, song choices, the way her make up is done. Simon can say what he likes and lie through his teeth: but I honestly can't say that I have heard one good word about her from anyone in the 'background' / behind the scenes.
Have you? Serious question.
