Based on a combination of speculation, deduction and facts that I do know about them, I reckon either it's because of one of (or a combination of) these two things:

1) Jay Z and Beyonce's marriage is totally ****ed up but they're still together because they have a kid together and Beyonce's entire career has been micro managed for her whole life to give off this image of the perfect woman, representing women everywhere, she's all about female empowerment and having the perfect life - having anything come out publicly to the contrary to that is unacceptable for her and her team. Right back to when she was a teenager, she was always getting ahead of everyone else and either you strapped in for the ride (Kelly Rowland, Michelle Williams) or you complained and got kicked to the side (LeToya Luckett, LaTavia Roberson, Farrah Fawcett, eventually even her own father was fired as her manager because he wasn't playing ball). I think she would take more than the average woman would in terms of spousal abuse for the sake of preserving her public image, because her public image is very much the backbone of her career. How can Beyonce sing about female empowerment if it's public knowledge that her husband treats her like **** in whatever way? That's why her career is so shady - little things like her buying up song writing credits that she had nothing to do with in order to make her appear to be more involved in the creative process and therefore making her songs seem more personal, honest and heartfelt; firing people who don't play along; plagiarising and paying people off etc etc etc...

2) Solange is a really volatile person. Beyonce's known for being a bit sly and ruthless but Solange is genuinely just a bit mental when she's angry. She's had quite a few spats with people who have helped get her to where she is that are common knowledge; maybe she can't handle her drink very well and maybe just generally she's not very good at hiding her emotions and unlike Beyonce doesn't have the privilege or common sense to hide that away from the public. Maybe she reacted to Jay treating Beyonce like **** or maybe she was just pissed at him because he hasn't made her career 'happen' despite the fact she is a really talented singer in her own right and does have an indie/cult following, it's not like, say, Aaron Carter sponging off Nick Carter. Solange was maybe angry that Jay hadn't made her happen like he'd made other people happen and was just frustrated and maybe Jay said something to set her off.
