OK, but I don't understand why i can call 1 gay a gay and then, maybe 5 gays, not gays.

I am sure many would offend, But to refer to someone as "The Gays" may offend someone just as much as saying, well, "The English". You are generalising on people as Stropz said. People are individuals and should not be generalised.
