Many of those 11m+ will be people who saw it originally who wanted to see it again, with many more being people who missed it on Saturday, but may tune in to later episodes after seeing that on YouTube. The rest are from abroad who can't watch the show on ITV anyway - so no loss of revenue there at all, but a whole lot of buzz around the show created.
