Is she an alcoholic or something, she is constantly talking about cider, wine any sort of alcohol

I think she is a bit, have often seen her polishing off other peoples' drinks on the sly and have heard Bea warn her not to take her drink behind her back.

True. Noirin was like this too. Drink becomes a social crutch...and leads to all sorts of problems.

because she couldn't say half the stuff she wants to say without alcohol. It's used an excuse for most people as well.
