I love mushrooms, but i guess they are a fungi not a vegetable, so i'll go with...

Corn (especially corn on the cob). Potatoes are a close second(especially red potatoes).

potatoes are the only ones I frequently eat. I'm quite fussy when it comes to vegetables.
