Any vegans on here?

I've been looking into going vegan for quite some time now, and my parents finally agreed that I can start one. The only issue is that they think that vegan food is more expensive and hard to cook, and to be frank I don't know what kind of things you'd put on a shopping list for quick dinners. I've got Tofu and almonds but other than that I'm honestly lost.

If anyone has any great staple foods to add that aren't majorly expensive or take a lot of effort to cook as well as recipes/ideas I would be really greatful. Trying to move on to a more healthy lifestyle. :)

Butternut Squash is a good veg to have.

You can stuff it with rice, tofu etc and roast it.

Also Pad Thai with tofu

I'd say be Vegetarian instead. Then the expenses get lowered, and you have a lot more tasty meals to choose from.

..marmalade sandwiches is a good one and kind of fits any meal/time of day...

Nah, you can make some fantastic vegan meals for really cheap. It's when you have to eat gluten free breads, pasta and cereals it becomes expensive.

Thank you :) I've joined two vegan/veggie forums too so that I can borrow ideas and tips. tbh I just think it'd be nice to be able to say "i'm a vegan".
