Nicole Kidman also has a daughter called Sunday (although in her case I wonder was this to do with leaving Scientology/Tom Cruise and going back to Christianity or something because her other daughter is called Faith)

There's an actress called Tuesday Weld and of course there is Wednesday Addams from the Addams family. I have actually seen someone called Sunday before, I think he was a Nigerian football player.

Do you know any others with day of the week names?

Not that i can think of no, there's a few months of the year though January, April, May, June, August
