What can be cooked in them, and what's the best way to clean them.

as i recall you just need a dod of kitchen roll (like a frying pan)

depends on the type you get. Some of them can cook just about anything, and the more you pay, the easier they are to clean. They tend to have detachable bits on the not so cheap ones

nothing better than a cheese and ham toastie

The cheese keeps oozing out the sides and back.
