surprisingly carrot cake isnt that healthy.... it still has the same amount of sugar in it but has the extra sweetness of carrots.

Heres a nice sponge cake one:
Ingredients
175g unsalted butter
175g caster sugar
3 eggs, beaten
175g self-raising flour
Filling
3 tbsp strawberry jam
500ml double cream
Method
1. Set the oven to 180C/gas 4. Lightly butter two sandwich tins, each with a diameter of 20cm.

2. Cream together the butter and sugar together until light & fluffy, then add the beaten egg a bit at a time.

3. Fold in the sifted flour & spoon the mixture into the prepared cake tins.

4. Bake for 20 minutes. Leave to cool & then remove from the tins.

5. Whip cream until thick & use it to fill the sponge with the jam.

6. Dust liberally with icing sugar to serve.

You could use white icing a do a ghost, orange food colouring to the icing and do a pumpkin

just found this wicked pic..... simple to do, instead of using just a dusting of icing sugar on top, make some icing mix using icing sugar and water in two pots, add some black colouring to one and then decorate as the following:

It seems pretty simple to do too.... just a basic sponge but with added food colouring in the right places
