I asked an American friend at University about this (as I knew he was a clever guy who would get that the grammar was wrong), and his explanation was that it was originally meant to be sarcasm. Like "Oooooh.
I could care less 
" (Like "Oh wow I totally care about this")
I don't know if he was right but it does make SOME sort of sense then at least
