I mean it's nonsense as there are modern RPG's with as big (and bigger) scope than the original FF7 in terms of everything I can think of - Length of story, amount of dialogue, number of locations, number and variety of enemies...
That said so long as the content being used to fill out 3 games is new, meaningful and ... good ... not just obvious filler, then I'm happy enough with them stretching it out over a bigger scale. Even if it is to make three AAA games worth of profits with the same engine and assets
