I'll tackle #3 first.
3) I took it as being a glass screen with a camera behind it. So they're touching the one they like, and it's computer graphics that make it "light up" etc. It's a very easy thing for the production company to do.
Now, about #1... I've discussed this with a friend before, and this is an explanation I came up with.
1) They dedicate a full day to "makeunder" someone. They get them in, take a picture and the street team go out and do the "before" interviews. Then the makeunder occurs, a picture is taken of them and the street team goes out and does the "after" interviews. Then their new look is revealed to them and they're shown the interview.
The reason it looks so fake is cos they edit out the boring bits (the waiting around).
