I don't think there really was an hour gap between the eviction and interview - the interview was recorded and shown later, I believe.

The reason for this I think is that, for a Wednesday eviction, they have to finish the show earlier (to comply with their entertainment license).

My take on the interview style is that is should be light-hearted - Davina doesn't do Paxman-style grillings very well and that type of interview would come across as very awkward.
