The actress, who plays former Queen Vic landlady Roxy Mitchell, will run the East End bar for one week as part of Beyond Walford.
According to The Sun, Simons said of the role: "It's been an insight seeing what it's like to run a real pub.
"I just hope I don't get carried away and start barring people - as Roxy does."
Beyond Walford is scheduled to air later this year.
