Josie would have been an idiot not to think she was in with a huge chance. And Aaron must have known he'd had a chance too after being saved first so many times (though I think he was genuinely not expecting to triumph).
But if someone like Aden or Maisy thought they could win, they'd be nuts!
There's only about 20% of HMs every year who could ever realistically win, so if you're not in that group, you shouldn't go in to try to win.
