Ingredients
2 tbsp olive oil
1 small onion sliced
2 large courgettes
1 handful wild garlic leaves
1 sprig of mint (10 leaves)
1 clove of garlic
2 chicken OXO cubes
Method
Fry the onion in the olive oil for 2 minutes.
Add the chopped courgettes and the crushed garlic clove.
Fry for another 2 minutes, cover with boiling water, add the crushed OXO cubes, bring to a boil and simmer for 10 minutes to soften.
Turn off heat, add the chopped wild garlic leaves and mint then leave for 2 minutes.
Liquidise, add salt and pepper, then serve.
