I don't think this is about religion. Shilpa has said
she wants an Indian guy, she never said she can't get together with a non-indian. Reason being, she feels way to much changes and adjusments will need to be made with someone that isn't the same as her. And if she does get together with Dirk, the possibilities are it won't get to marriage, and thats what she wants to avoid.
However there might be a mutual admiration thing going on, perhaps on Shilpas' side its purely platonic, but the same can't be said for Dirks' feeling.
Shilpa is gorgeous and Dirk for his age is very good too
