I never got any sense that Sam was attracted to Charlie. There was zero sexual chemistry there. He was friendly to her. And she is very tactile in how she expresses friendship.

The thing about fancying Gina only surprised her inasmuch as he said something about it. When asked about it by Emma she said 'everybody knew' that he fancied her. Probably why he was so out of sorts about Sophie's questions in the safe house. He clearly fancied Gina and was clearly trying not to let on about it (prior to getting steaming drunk at the end).
