Whatever Katie says or does, there is strong conviction behind it which she's willing to debate and take on the counter argument.
She doesn't get offended, she sensibly talks through issues and accepts the other person opinion.
What Perez is doing is playing the bigot card with zero conviction just to shut down a conversation he doesn't want to or is incapable of debating.
If he accused certain views she may have on things as homophobic in the course of a debate relating to gay issues then (while I'm sure she might disagree) she would take it on board.
But that wasn't the case.

I totally agree. Perez admitted that he would look for housemates weaknesses and exploit them and using the homophobic card is one I expected him to use.
Remember at the start of the show in the task where he verbally attacked Katy H? She put her hand lightly on his arm and he reacted as if she had struck him.
This is what Perez does. Takes a tiny little thing and makes it a huge offensive action.
