I don't know for sure, but it looked to me like Tiffany was having a panic attack. Symptom of claustrophobia sometimes are part of a panic attack.
I suspect that she was afraid of the 'therapy' Gillain was talking about and did not want to get into her issues (i.e. recent miscarriage) and just panicked. When Gillian assured her that she wasn't going to have to do therapy...you could see that Tiffany visibly calmed down and was able to go back to the room and finish the task.
I do believe a lot of Tiffany's OTT reactions are for airtime (ie. the David Guest is dead reaction) but this seemed real to me. We will never really know.
