When I worked in a kitchen, I went in one morning and discovered that the delivery of tomatoes had been left at the back door... Where they had all been nibbled by what I assume was rats.
... The guy who trained me (and by "trained", what I mean is, I got about 2 hours of vague instructions and then immediately signed up for working solo... Haha) told me to "just cut off the bitten bits and use them anyway".

. I used my discretion and assumed that the customers would rather just not have tomatoes...
