You have to pay close attention with EastEnder's shoddy writing; she told Max that she "Never wanted to be in the same room as him ever again!". The implication is that she has been at the hospital at times, but only when Max isn't around as she didn't want to see him, therefore she was "there when the cameras weren't". It's stupid but I'm pretty sure that's what they're going for.

They do things like that all the time; people disappear and it IS explained, but literally someone will be like "Oh _____ has gone to France for a month" ... and that's it... it's said once... so if you miss that one line you will have no idea where they went.
