Don't know why they have insisted on calling them by their 'new names' all this time (even in Davina's interviews with other housemates and on BBLB).

Legally, anyone (including Freddie and Sophie) can call themselves, and be known as, anything they like - with or without deed poll - so long as their intention isn't to defraud anyone.
