Fellow cookie lovers this is my favourite cookie recipe:-
Soft & Chewy Peanut Butter Cookies 300g plain flour 1 level teaspoon bicarbonate of soda 250g soft brown sugar 150g golden syrup 200g butter (softened) 3 large eggs 2 small jars of good quality peanut butter - 1 crunchy & 1 smooth (I use Whole Earth) 10ml vanilla essence chocolate chips Preheat oven to 125-150c. Thoroughly combine the flour and bicarb. and set aside. In a large bowl beat sugar, syrup and butter until light and fluffy, mix in the eggs, peanut butter and vanilla. Add the flour mixture and chocolate and blend briefly until just mixed. Divide the dough into 3 portions, wrap 2 of the portions and freeze for making cookies at a later date. Line a baking sheet with baking paper and divide the 3rd portion of dough into about 10 or 11 balls, spread out on the baking sheet leaving an inch around each ball as the cookies spread whilst baking. Place in oven for 15 - 18 minutes until cookies just start to brown slightly at the edges, be very careful not to overcook, they should still look a little undercooked. Remove from oven and try to resist eating until cool enough to pick up! |
