I\'m confused about the guinea pig thing

I always thought the new contestants meet for the first time on the opening night. But I've read a few comments on here about them testing the housemates first without the cameras... How does that work? Then isn't it obvious that they all know each other on opening night...?

If the question's already been asked a million times, my bad.
