I cringed at the 'they all are' comment, too, and although I thought it was unwise of Natalie to overreact the way she did, I can understand how she felt she was being patronised.

Jayne didn't bring up skin colour unnecessarily. They were already discussing race and racism and if you'd listened properly to her story, she was saying that her mother was abused by a carer, who was black, and they put down on her file that she didn't do well with black people (i.e. was a racist) and Jayne was explaining that this wasn't the case at all and her mother was nothing like that. She was saying nice things, that she herself had black carers who gave her her life back.
