A few examples for you. A person may not have sex for several years. This does not automatically mean the person is celibate in the correct sense of the word. (ie: vowed not to have sex), it could mean the opportunity has not arisen for them to have sex - and it is nothing more than that, they simply have not had sex for a while.

Another example: I personally have tried various types of shellfish (since you seem to correlate to mussels and oysters). This is the very important bit coming up: I have tried them. Indeed, several times. No matter how often I tried, I didn't like them. Therefore I can say that I am not a shellfish eater - evern though I had seveal types down my throat and in my belly. It is my choice not to eat any more shellfish even though I tried, therefore I am not consided a shellfish eater.

Now adopt that context into your context of 'being gay'. I think you misunderstand what being gay means. A person can try out various things, it does not mean that they fit into a certain niche.
