We have these at the store I work at. They’re not on all the time, there’s a button you have to push before they actually start recording and we use them for when we have shoplifters who’ve been caught but start to cause trouble and won’t leave. It’s more to scare them out the store by saying we’ll record them and phone the police if they continue to be a problem and usually they just leave.

We wouldn’t record old Doris buying her milk and eggs at 9am
