I don't think Dan is 'talking behind backs'. They ALL talk about each other to those they are closest to. They have to talk about something, otherwise they'd be discussing the weather or what they had for breakfast - and they all know that isn't what the viewers want.
Dan has also told Callum and Wolfy what he thinks to their faces, so he's upfront as well.

I think the others know that Daley uses the same gym that Hazel's ex used because they were talking about it outside in front of others when Charlie put her foot in it.

I just wish someone had the balls to tell him he is a prick for what he's doing to his girlfriend. If I said it and got knocked out.... at least he'd have an honest opinion thrust his way.
