When I say older Video Games the most modern you can go up to is the Seventh Generation (PS3, Wii, Xbox 360) I'll make an exception for any third party Wii U Games that you'd like to see on the PlayStation Store because not all of their Games have been made available on the newest Consoles like the PS4 and Xbox One Games have fortunately.
I'm personally big on trying to preserve Video Games, but sadly the industry does a really bad job at it unless the Game is hugely popular from the older Consoles. Anyway sorry for rambling. Here's my list of older Games that I'd like to see on the PS5 PlayStation Store. 1. Shadow The Hedgehog - I know that this Game was very controversial at the time of it's release, but I remember loving the Game as a kid, and as I've gotten older I've appreciated that as a spin-off it was trying to do things differently to a traditional Sonic game. Plus Emulators are annoying to play this game on so I demand a PS5 re-release. 2. Crash Bandicoot: The Wrath Of Cortex - I loved the Game despite it's atrocious load times. Plus it's childhood memories of the first Crash Bandicoot Game that I played. 3. LMA Manager 2003 - I don't why I want this specific LMA Manager Game to be re-released in particular, but it is my favourite Game in the franchise for no real reason whatsoever. I'd love to have another shot at this Game again someday. 4. Silent Hill 4: The Room - The only reason I've picked this particular Silent Hill Game out for myself is because I've never beat it and I would like to. Plus the story was interesting if I remember correctly. 5. NanoTek Warrior - For me personally I've never played a Game quite like NanoTek Warrior before or since tbh. I really enjoyed the Game on the PS1, but sadly the copy that I had at the time had a busted Password system, so I'd love a PlayStation Store re-release for it so that problem would be fixed. 6. Mars Of Destruction - I'm curious to know if it's better than the atrocious Anime OVA. Sadly it was only ever released in Japan at the time though. 7. .Hack//Infection - Of the Isekai series I've always liked the look of the .Hack franchise. I'd love to be able to give this game a shot on the PS5 to know if I would like it or not. 8. Dino Crisis - It's Dino Crisis, it should be available on all PlayStation Consoles. 9. Final Fantasy IV - I've always really liked this Game, I had the PS1 port of the Game (which sadly broke with age) and it's always been overlooked sadly in the FF franchise compared to what came after. But I would love to have it on the Ps5 PlayStation Store at some point just to take on Zeromus. 10. Let's Make A Soccer Team - Again I loved this Game as a kid, simple as that really. Again apologies for rambling, I mainly picked PS1 & PS2 Games, but you can pick up to the PS3 generation of Games for your list if you wish.

A few spring to mind -
Scarface The World is Yours - Underrated game, though most people i know hate it. The driving mechanics are a bit rough i guess. BLACK - My favourite FPS ever. Before it's time (2006) GTA LCS and VCS - Really fun GTA's. I have them all on PS2 and Emu, but would decent to see them get a release on PS5.

If by "on the PS5" you mean remastered (not remade)?
Medal of Honor 1 and Underground Tomb Raider 1-6 Crash Twinsanity Prince of Persia: Warrior Within and 2008 Assassin's Creed 1

A 4K remaster of SSX Tricky. Just the graphics - keep everything else untouched. I would be sooo happy.

Remastered or just emulate the original versions digitally from the PlayStation Store, I'm not really into the idea of full blown remakes, I should've clarified that earlier.

1. GTA IV The Complete Edition - Multiplayer on IV was just soo much better than V. I spent so many hours playing it and the story mode for IV and the DLC’s I still maintain is the best out of all the GTA games. Would love it to be included on the PS5 but I can imagine now that Rockstar would run into a lot of trouble trying to licence songs that were on the original games. (This reminds me I need to carry on my story mode I started back in December )
2. Tony Hawks Underground - Feel like the Tony Hawks franchise gets forgotten about when I try and think of great PS2 games because there were so many great games on the PS2. Tony Hawk games were so much fun and the soundtracks on them were pretty cool too. 3. Call Of Duty World At War - I think out of all the COD games this was my favourite with the original zombies mode and some really good multiplayer maps as well. Even the campaign was awesome, I enjoyed the WW2 setting. 4. Area 51 (2005) - This was the game that got me into FPS in the first place. It was quite a scary game at times but the gameplay was awesome. 5. Dino Crisis - Would agree with Mock on that one it’s an epic game idk why they haven’t remastered this yet. 6. Midnight Club 3 DUB Edition - Real fun racing game with some really good car customisations. Think this was one of the few games that gave NFS Underground a run for it’s money. I’ll try and think of some more later on
