S15 is regarded as the best recent season but I dipped in and out of that one as I was lowkey losing interest in the show/reality tv in general. I think you'll enjoy it though as there's a lot of drama and you'll definitely love Lady C (she's like Kim Woodburn in CBB, even though Kim's actually done IAC as well )

I'll also throw it out there that the current series is actually shaping up to be pretty good and easily has the best cast in recent years, which I guess is somewhat refreshing after the last two series.

S7-11 are on Youtube in parts which are kinda annoying (I re-watched S7-9 a few years back). You might have to look around on streaming sites to find where you can watch some seasons because as far as I know, there isn't a Youtube channel or a website like VideoBB where they've all been uploaded like BBUK.

I think you'll like IAC though. I'd sort of describe it as CBBUK meets Survivor.

3 is worth a watch and features probably the most memorable storyline with Katie Price and Peter Andre showmance (if you wanna call it that) which ended up dominating the tabloids over here in the 2000s. However, the last time I checked, the older series (1-6) are nowhere to be found online, unfortunately. I think the closest thing to seeing some of the older series is o just have a look at some clips on the IAC Youtube channel because a few years back they started uploading clips of memorable moments, arguments and challenges from all seasons which I thought was pretty cool.

S7-10 is the golden era. 7 is the best one imo and it has Janice Dickinson and Biggins from CBB. Janice might be the best campmate of all time and she's far better in the jungle than she was in CBB. She has an iconic rivalry with another person and in general, that cast is very strong.

S12 is also really good.
