Need recipe ideas pls
 
Been told by the doctor not to eat gluten or dairy for the foreseeable future. (:bawling:)

Anyone got/know of good recipes for dinners (can be meat/vegetarian/vegan)?

Don't know recipes but we are on the Keto diet which means eating meat and virtually nothing else. Get some chops, bacon n sausage.

1. Chickpea & Sweet Potato Curry (Vegan)

Ingredients:
• 1 tbsp coconut oil
• 1 onion, chopped
• 2 garlic cloves, minced
• 1 tbsp grated ginger
• 1 tbsp curry powder
• 1 tsp cumin
• 1 sweet potato, diced
• 1 can chickpeas, drained
• 1 can coconut milk
• 1 cup vegetable stock
• Salt to taste
• Fresh coriander

Instructions:
1. Sauté onion in coconut oil until soft.
2. Add garlic, ginger, and spices. Stir 1 min.
3. Add sweet potato, chickpeas, coconut milk, and stock. Simmer 20 mins.
4. Season and serve with rice or quinoa.



2. Garlic Lemon Chicken Thighs (Meat)

Ingredients:
• 4 skin-on chicken thighs
• 4 garlic cloves, minced
• Juice of 1 lemon
• 1 tbsp olive oil
• Salt and pepper
• Fresh parsley

Instructions:
1. Preheat oven to 200°C.
2. Mix garlic, lemon juice, olive oil, salt, and pepper.
3. Rub over chicken.
4. Bake 30-35 mins until skin is crisp.
5. Garnish with parsley.



3. Mediterranean Quinoa Salad (Vegan)

Ingredients:
• 1 cup cooked quinoa
• 1 cucumber, diced
• 1 red pepper, chopped
• 1/4 red onion, thinly sliced
• 1/4 cup olives
• 2 tbsp olive oil
• Juice of 1 lemon
• Salt and pepper
• Fresh mint or parsley

Instructions:
1. Toss all ingredients in a bowl.
2. Chill before serving.



4. Turkey Lettuce Wraps (Meat)

Ingredients:
• 500g ground turkey
• 2 tbsp tamari (gluten-free soy sauce)
• 1 tbsp sesame oil
• 1 garlic clove, minced
• 1 spring onion, chopped
• Lettuce leaves (romaine or gem)
• Optional: grated carrot, cucumber

Instructions:
1. Cook turkey in sesame oil.
2. Add garlic, tamari, and spring onion. Cook until golden.
3. Spoon into lettuce leaves. Top with optional veg.



5. Coconut Chia Pudding (Vegan)

Ingredients:
• 1 cup canned coconut milk
• 3 tbsp chia seeds
• 1 tbsp maple syrup
• 1/2 tsp vanilla extract
• Berries or mango for topping

Instructions:
1. Mix coconut milk, chia, syrup, and vanilla.
2. Chill at least 4 hours.
3. Top with fruit before serving.

4. Blend or leave chunky. Finish with lemon juice.

Argh I know nothing about dairy and gluten free diets, I did find myself in the Free From aisle in Sainsburys today so that is worth a look as they have alot of gluten free products

…my two go to recipe sites are GoodFood and Happy Foodie because they’re such simple to follow recipes plus they do many one pot/traybake types as well, which are perfect…Nadiya also does dairy free and gluten free as well, I think and she tends to simplify as well…so her recipes are worth a look…

Just did a Tesco run. Pasta etc wasn’t too bad, but GF bread is extortionate! Decided to get GF flour and will my own.

dairy is fairly obvious and easy to avoid. Gluton is basically anything bread based, so it still leaves a bunch of options. Avoid restuarant food and takaways unless you know exactly what you are getting. Everything else is easy to substitute or avoid

you can live on equal proportions of lentils and rice and it dirt cheap. Lentil soup is my absolute favourite and it is extremely good for you

Luckily I love lentils and my love for rice is back after years of back packing and overdoing rice dishes. :laugh:

Just had a sandwich with gluten free bread and dairy free cheese (plus meats, salad, hummus). Was actually ok. The bread not as soft as regular bread, but I can look around for better quality.

As a recently diagnosed with type 2 diabetic, I have recently turned to having at least 80% vegetables with every meal I eat.:shocked:

I can't really have milk. Maybe just a tiny bit with one cup of coffee in the morning. Just one cup of coffee per day.

But this mostly all veg diet I havn't lost weight but my blood sugars are really good. Only 5.3 glucose reading this morning which is terrific for a diabetic. :p :D
