John Barry, Bernard Hermann and Ennio Morricone are probably my top three.
Jerry Goldsmith is great too for his Alien and Papillon scores. Edit: Oh, can't forget Nino Rota either.

I love so many, but it has to be Jerry Goldsmith because his music is a great accompaniment to the film in question, rather than an ego boost for himself, if you know what I mean? When it comes to other composers, I know instantaneously that it's their music, but with Goldsmith it was always new and challenging.

Yeah, Goldsmith has a very inobtrusive style that I like. Chinatown was another great one. Shame he got all corny and schmaltzy in the 80's with Star Trek: The Motion Picture's score and ended up sounding like another John Williams.

Definatley agree with Hans Zimmer

Jerry Goldsmith, James Horner (listen out for motifs he repeats across films mind you
 ), John Williams, Michael Giacchino (his work on Lost was great. Really like his Up soundtrack also). Oh yeah Morricone and John Barry too.
