In case anyone hasn’t realised yet - you can cheese some of the challenge points so easily

First off the crafting ones - you can just keep reloading. Load a save where you have plenty of crafting supplies, craft stuff (say 10 items), quit, reload, craft the same 10 items... they all count. Just reload until you get master survivalist

Cat Burglar the same. Save near a lock that needs picked, keep reloading and picking the lock.

Poacher - same near some animals.

So long as you have a decent stock of ammo for each gun/explosives, you can reload either the village wolf attack or the wolf stronghold section repeatedly and get ALL of these in no time. Just quit and reload when the ammo for the one you’re getting runs dry...

I’m not sure if this is intentional because it makes a tonne of the challenges ridiculously easy but
