The fine line between jollof rice infused with a bit of nutmeg vs. too much nutmeg in the rice being kept. It’s not always an easy balance to strike and it can sometimes take a bit of experience to keep you on the other side of the line, but when it works it works. It’s just that you’ve got to be more careful with nutmeg than cinnamon if you use either for your jollof.
