It was as good as over-cooked pork covered in honey can ever be, really. My sister gave me a recipe that I'll try next time. She roasts some small new potatoes, tomatoes, and mushrooms, then covers the chops in pesto and cooks them on top of the other stuff.

I'll still over cook them, but the rest of it sounds really nice.
