Dexter knew exactly what he was saying. He even admitted to Sam later, "I knew you were listening". Why would he say something that he knows would piss Sam off if he knew he was listening? Dexter knew exactly what he was saying and how he was saying it in order to annoy Sam but still make it seem like it was a misunderstanding in order to portray Sam as the bad guy. It is Callum all over again! He said horrible things to Callum that he knew would set him off, but he just said them in a childish manner to fool the other housemates. ie.
