I am sure the mould you get on food like this is some sort of penicillin or it originates from that, can't remember where I heard it but sure it's a fact and scraping mould from jam is apparently ok.
"Jam is a preserve, but the reduced sugar in modern jams means they go mouldy more easily.
But if you scoop off all of the mould and a few centimetres beneath it, to ensure you’ve captured any spores that are impossible to see, then the jam should be safe to eat."

penicillin is derived from some types of mould, and there are moulds that are perfectly safe. Also as jam is almost entirely sugar, it iis safe to simply scrape mould off. You can do similar with cheese. Heck some cheeses are covered in mould by design
