When my. Brother worked as a butcher he was alway being asked could he get bush meat.

Basically an animal cooked or still being intact so it can told be cooked with all its organs still in.

I thought they always gutted animals and fish before cooking / preparing to remove the bladder/bowels ( and their contents ) - hygiene
